Lamb is a sheep that is less than one year old.  Lamb meat has a milder flavour and less fat then older sheep.  We carry a variety of cuts of lamb, including rack of lamb, lamb chops, leg, loin, neck, rump, shank and sholder.  We also partner with MacQarrie’s Meats PEI to offer you lamb sausage.

What cut should I buy?

The most tender part of a lamb are the ribs or rack of lamb – lamb chops when cut up.  This is why it is more expensive then the other cuts.  The loin is likely the next most tender and is typically cut into loin chops.   Then comes the shoulder, leg, rump, shank, etc.

RACK OR LAMB CHOPS (RIBS)

Considered the tenderest part of a lamb, we can provide you with a full rack of ribs or cut them into rib lamb chops.  Either way they will be tender and delicious!

 

LAMB SAUSAGES

Our delicious lamb sausages are pure gluten-free Prince Edward Island goodness!  They come in three types:

  • Merguez – a spicy fresh lamb sausage that originates in North Africa’s Maghrebi cuisine.
  • Honey Garlic – made from fresh lamb with just the perfect amount of honey and garlic.
  • Breakfast – a mild lamb sausage that is especially good as the first meal of the day.

LAMB CUTS

We generally have a variety of lamb cuts including shoulder, loin, rump, leg, shank and neck – but this may vary from time-to-time.  [ Note that lamb chops, and rack of lamb, are not included here as they are the choicest cut and have a slightly higher price. ]

GROUND LAMB

Ground lamb is a tasty way to put a new twist on your favourite ground meat dishes – like burgers, meatballs and casseroles. Ground lamb is also used often in Greek and Indian dishes like kebabs and curries.

LAMB ORGANS

Lamb organs available include lung, heart, liver, sweetbreads and brain, kidney, and tongue. Like many around the world, we believe in using as much or our lambs as possible. For example, a traditional Scottish dish is haggis made from “sheep’s pluck” – lungs, heart and liver.
